    Cook the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, let it cool to room temperature.

    Prepare the Ingredients

    Slice the Scottish salmon, cucumber, and avocado into thin strips.

    Make Lemongrass Oil

    In a small bowl, mix the lemongrass oil with nuoc mam. Adjust the seasoning to taste.

    Assemble the Maki

    Place a nori sheet on a sushi mat. Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving a small border at the top. Place the salmon, cucumber, and avocado at the bottom of the rice-covered nori. Drizzle some lemongrass oil mixture over the fillings.

    Roll the Maki

    Using the sushi mat, carefully roll the nori away from you, pressing gently to form a tight roll. Seal the edge with a little water. Repeat with the remaining ingredients.

    Slice and Serve

    Slice the sushi rolls into bite-sized pieces using a sharp knife. Serve with pickled ginger, wasabi, and any remaining lemongrass oil mixture.
