Prepare the Shallots
Thinly slice the shallots. Heat vegetable oil in a frying pan over medium heat and fry the shallots until golden brown. Remove and drain on paper towels.

Prepare the Crabs
Clean the soft shell crabs by removing the gills and any other unwanted parts. Rinse under cold water and pat dry.

Coat the Crabs
In a bowl, mix the all-purpose flour, cornstarch, salt, and black pepper. Dredge the crabs in the mixture until well coated.

Fry the Crabs
Heat the vegetable oil in a large frying pan over medium-high heat. Fry the coated crabs for about 3-4 minutes on each side or until golden brown and crispy. Remove and place on paper towels to drain excess oil.

Prepare the Apple
Core and slice the Honeycrisp apple into thin wedges.

Serve
Arrange the fried soft shell crabs on a plate, top with fried shallots, and serve with the sliced Honeycrisp apple and a drizzle of nuoc mam for dipping.
