Prepare the Dashi

    Make the Green Tea Dashi

    In a pot, combine water and kombu. Let it soak for 30 minutes. Heat the pot over medium heat until just before boiling. Remove kombu and add bonito flakes. Simmer for 5 minutes, then strain the dashi into a bowl. Add green tea and set aside.

Cook the Rice

    Prepare Koshihikari Rice

    Rinse the koshihikari rice under cold water until the water runs clear. Drain and let it sit for 30 minutes. Cook the rice according to package instructions (typically 1 cup rice to 1.2 cups water).

Cook the Shrimp and Onions

    Sauté Shrimp and Pearl Onions

    In a pan, heat sesame oil over medium heat. Add pearl onions and sauté until translucent, about 3-4 minutes. Add shrimp, soy sauce, and mirin. Cook until shrimp is pink and cooked through, about 3-5 minutes. Remove from heat.

Assemble the Dish

    Combine and Serve

    In serving bowls, place a scoop of cooked koshihikari rice. Ladle the green tea dashi over the rice. Top with the sautéed shrimp and pearl onions. Garnish with chopped green onions and shredded nori. Serve immediately.
