    Prepare the Pork Belly

    Preheat your oven to 150°C (300°F). Score the skin of the pork belly in a crosshatch pattern and rub it with salt and black pepper. Place it in a roasting pan.

    Roast the Pork Belly

    Roast the pork belly in the preheated oven for about 2.5 to 3 hours, or until the skin is crispy and the meat is tender.

    Prepare the Butternut Squash

    While the pork is roasting, peel and cube the butternut squash. Toss it with olive oil, salt, and pepper. Roast in a separate pan in the oven for about 30-40 minutes until tender.

    Make Pumpkin Seed XO Sauce

    In a skillet, toast the pumpkin seeds over medium heat until golden. Remove from heat and blend them with honey and shiro dashi until smooth. Adjust seasoning to taste.

    Serve

    Once the pork belly is done, let it rest for 10 minutes before slicing. Serve the pork belly slices on a plate with roasted butternut squash and drizzle with pumpkin seed XO sauce.
