    Prepare the eggplant

    Preheat your oven to 400°F (200°C). Slice the Japanese eggplants in half lengthwise and score the flesh with a knife in a crisscross pattern to help the flavors penetrate.

    Make the lemon miso glaze

    In a bowl, combine miso paste, lemon juice, honey or maple syrup, sesame oil, minced garlic, and a pinch of salt. Mix well until smooth.

    Coat the eggplant

    Brush the cut sides of the eggplants with the lemon miso glaze, ensuring they are well coated.

    Bake the eggplant

    Place the eggplants cut-side up on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, or until they are tender and caramelized.

    Garnish and serve

    Once baked, remove from the oven and sprinkle with black sesame seeds and chopped green onions before serving.
