    Prepare the Fish

    Pat the madai fillets dry with a paper towel. Season both sides with salt and black pepper.

    Heat the Olive Oil

    In a skillet, heat the olive oil over medium heat until it shimmers.

    Cook the Fish

    Place the madai fillets in the skillet skin-side down (if applicable) and cook for about 4-5 minutes until golden brown. Flip and cook for another 3-4 minutes until the fish is cooked through and flakes easily.

    Add Shiso and Lemon Zest

    Remove the skillet from heat. Add the shiso leaves and lemon zest over the cooked fillets, allowing the residual heat to wilt the shiso slightly.

    Serve

    Plate the madai fillets and drizzle with any remaining olive oil from the skillet. Serve immediately with extra lemon wedges if desired.
