    Prepare the Lobster

    Bring a pot of salted water to a boil. Add the lobster tail and cook for about 5-7 minutes until it turns bright red. Remove from water and let cool. Once cooled, slice the lobster tail thinly.

    Char the Jalapeño

    Using a grill or a stovetop flame, char the jalapeño until the skin is blistered and blackened. Remove from heat, let cool slightly, then remove seeds and finely chop.

    Make the Curry Mixture

    In a bowl, combine the charred jalapeño, curry powder, salt, and a squeeze of lime. Mix well and set aside.

    Prepare the Vinaigrette

    In a separate bowl, whisk together sesame oil, rice vinegar, soy sauce, and a pinch of salt until emulsified.

    Assemble the Dish

    On a serving plate, arrange the sliced lobster in a circular pattern. Drizzle the curry mixture over the lobster, followed by the sesame vinaigrette. Garnish with thinly sliced leeks and fresh cilantro.
