Prepare the River Rocks
Clean the Japanese river rocks thoroughly and set them aside.

Heat the Rocks
Place the river rocks on a grill or in an oven preheated to 200°C (392°F) and heat them for about 30 minutes, or until they are very hot.

Prepare the Wagyu Beef
While the rocks are heating, take the Westholme Wagyu beef and slice it into thin strips. Season the beef with sea salt and black pepper.

Cook the Beef
Once the rocks are hot, carefully place them on a heat-resistant platter. Arrange the Wagyu beef strips on top of the hot rocks. The beef will cook quickly due to the high heat of the rocks.

Serve with Ponzu
Drizzle ponzu sauce over the beef and garnish with freshly chopped chives. Serve immediately for the best experience.
