Preparation Steps

    Prepare the Lobster

    Preheat your hearth or oven to 400°F (200°C). Place the live lobsters in the freezer for about 15 minutes to sedate them. Once sedated, place them on a clean surface and cut them in half lengthwise.

    Make Umeboshi Butter

    In a small bowl, mix the softened unsalted butter with umeboshi paste until well combined. Set aside.

    Cook Maitake Mushrooms

    In a pan, heat a tablespoon of butter over medium heat. Add the maitake mushrooms and sauté until golden brown. Season with salt and pepper to taste.

    Roast the Lobster

    Place the lobster halves on a baking tray, cut side up. Brush the umeboshi butter generously on each half and season with salt and pepper. Roast in the preheated hearth or oven for about 15-20 minutes, or until the lobster meat is opaque and cooked through.

    Prepare Tom Kha Base

    In a separate pot, heat the tom kha soup base until simmering. Adjust seasoning if necessary.

    Serve

    Place a ladle of tom kha soup in a bowl, add the roasted lobster halves on top, and garnish with sautéed maitake mushrooms and fresh cilantro. Squeeze lime juice over the dish before serving.
