    Marinate the Hamachi Toro

    In a small bowl, mix the soy sauce, mirin, and sake. Add the Hamachi Toro and let it marinate for 15 minutes.

    Prepare the Torch

    Prepare a kitchen torch or broiler for the next step.

    Torch the Hamachi

    Remove the Hamachi Toro from the marinade and gently pat it dry. Using a kitchen torch, lightly sear the surface of the fish until it is slightly charred but still pink inside. If using a broiler, place the fish on a baking sheet and broil for 1-2 minutes, watching closely to prevent burning.

    Slice the torched Hamachi Toro into bite-sized pieces. Drizzle with additional soy sauce if desired, add a dollop of wasabi, and garnish with chopped green onions and sesame seeds. Serve immediately.
