Dry Aging Process and Cooking Directions

    Dry Aging the Salmon

    1. Pat the Ora King salmon fillet dry with paper towels. Place it on a wire rack set over a baking sheet.

    2. Generously season the salmon with sea salt on all sides. Let it sit at room temperature for 30 minutes.

    Wrap and Refrigerate

    3. Wrap the salmon loosely in cheesecloth or parchment paper. Place it in the refrigerator for 9 days, ensuring good air circulation.

    Preparing for Cooking

    4. After 9 days, remove the salmon from the refrigerator. Unwrap it and pat dry again. Season lightly with black pepper.

    Cooking the Salmon

    5. Heat olive oil in a skillet over medium heat. Add the salmon skin-side down, cooking for about 4-5 minutes until the skin is crispy.

    6. Flip the salmon and cook for an additional 3-4 minutes until the desired doneness is reached. Garnish with fresh herbs before serving.
