Brussels Sprouts

Step 1: Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half lengthwise.

Step 2: Blanch the Brussels Sprouts
Bring a pot of salted water to a boil. Add the halved Brussels sprouts and blanch for about 3-4 minutes until bright green and slightly tender. Drain and set aside.

Step 3: Make the Fish Caramel
In a large skillet over medium heat, combine the fish sauce and brown sugar. Stir until the sugar dissolves and the mixture begins to bubble. Let it cook for 2-3 minutes until it thickens slightly.

Step 4: Add the Brussels Sprouts
Add the blanched Brussels sprouts to the skillet. Toss to coat them in the fish caramel sauce. Sauté for 5-7 minutes until they are caramelized and slightly crispy.

Step 5: Season and Serve
Remove from heat and stir in the lemon juice, minced garlic, sliced chili, salt, and black pepper. Adjust seasoning to taste. Serve warm.
