Marinate the Tuna
In a medium bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, minced garlic, and grated ginger. Place the bluefin tuna loin in a shallow dish, pour the marinade over it, cover, and refrigerate for at least 30 minutes.

Sear the Tuna
Heat a skillet over medium-high heat and add a little oil. Remove the tuna from the marinade (reserve the marinade) and sear the tuna loin for about 1-2 minutes on each side for a rare finish, or longer if desired.

Finish and Serve
Once seared, let the tuna rest for a few minutes before slicing it thinly. Drizzle with the reserved marinade, sprinkle with black sesame seeds and sliced green onions. Season with salt and pepper to taste.
