    Prepare the Beet

    Preheat the oven to 400°F (200°C). Wrap each candy stripe beet in aluminum foil and place them on a baking sheet. Roast for about 45-60 minutes or until tender. Allow to cool, then peel and slice.

    Make Cashew Creme Fraiche

    Soak the cashews in water for at least 4 hours or overnight. Drain and rinse the cashews, then blend them with 1/2 cup of water, olive oil, salt, and any additional seasonings until smooth and creamy. Adjust the consistency with more water if needed.

    Prepare the Grapefruit

    Cut the grapefruit in half and segment it by slicing between the membranes to release the fruit. Set aside the segments.

    Assemble the Dish

    On a serving plate, arrange the roasted beet slices. Drizzle with cashew creme fraiche, garnish with grapefruit segments, and sprinkle with fresh herbs. Season with pepper to taste.
