    Prepare the Wagyu Beef

    Season the Wagyu coulotte generously with salt and pepper. Sear it in a hot skillet with a little olive oil for about 1-2 minutes on each side until browned. Remove from heat and let it rest before slicing thinly.

    Make the Brussels Chimichurri

    Finely chop the Brussels sprouts, parsley, and cilantro. In a bowl, combine the chopped ingredients with minced garlic, red chili flakes, olive oil, red wine vinegar, salt, and pepper. Mix well and set aside.

    Prepare the Miso Foam

    In a small saucepan, gently heat the soy sauce, sesame oil, and miso paste until smooth. Separately, whisk the eggs in a bowl. In a separate pot, create a double boiler using a pot of simmering water and place the bowl with the egg mixture over it, whisking constantly until the mixture thickens and becomes foamy.

    Plate the Dish

    On a plate, arrange the sliced Wagyu beef. Top it with the Brussels chimichurri and spoon the miso foam over the top. Serve immediately.
