Tempura Batter and Sweet Potatoes

Prepare the Sweet Potatoes
Peel the sweet potatoes and cut them into thin, fryable sticks or rounds. Set aside.

Make the Tempura Batter
In a bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the cold sparkling water until just combined. The batter should be slightly lumpy.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Sweet Potatoes
Dip the sweet potato pieces into the tempura batter, allowing excess batter to drip off. Carefully place them into the hot oil, frying in batches until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Serve with Chili Beer and Spicy Honey
Serve the tempura sweet potatoes hot with a side of chili beer and drizzle with spicy honey for dipping.
