Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit for 10 minutes.

Season the Rice
In a small bowl, mix together the rice vinegar, sugar, and salt. Heat the mixture slightly to dissolve the sugar and salt. Once the rice has rested, gently fold this mixture into the rice, being careful not to mash the grains. Let the rice cool to room temperature.

Shape the Nigiri
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 1-2 tablespoons) and shape it into an oval. Place a slice of sake toro on top of the rice.

Serve
Arrange the nigiri on a plate. Serve with soy sauce and wasabi on the side. Optionally, garnish with a strip of nori.
