    Cook Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to manufacturer's instructions. Once cooked, let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture while fanning the rice to cool it down.

    Prepare the Madai

    Slice the fresh madai fillets against the grain into thin pieces, about 1/4 inch thick.

    Form the Nigiri

    Wet your hands with water to prevent sticking, take a small amount of sushi rice (about 2 tablespoons), and form it into an oval shape. Place a slice of madai on top of the rice. Repeat with remaining rice and fish.

    Serve

    Serve the madai nigiri with wasabi, soy sauce, and pickled ginger on the side.
