Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to your rice cooker's instructions. Once cooked, let it cool slightly.

Season the Rice
In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until the sugar dissolves. Pour the mixture over the warm rice and fold gently to incorporate. Let it cool to room temperature.

Prepare Nigiri
Wet your hands with water to prevent sticking. Take a small amount of sushi rice and shape it into an oval. Top each piece with a slice of fresh fish. Repeat until you have twelve pieces.

Prepare Makimono
Place a nori sheet on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a small border at the top. Lay cucumber and avocado slices in a line along the bottom. Roll tightly. Slice into bite-sized pieces. Repeat for the second makimono.

Assemble the Ichi Box
Arrange the nigiri and makimono on a serving platter. Drizzle hama chili sauce over the top, and serve with soy sauce, wasabi, and pickled ginger on the side.
