    Cook the Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot. Cook according to rice cooker instructions or bring to a boil, then reduce heat and simmer for 20 minutes. Remove from heat and let it sit for 10 minutes.

    Season the Rice

    In a small bowl, combine rice vinegar, sugar, and salt. Heat gently until sugar and salt dissolve. Fold this mixture into the cooked rice while it is still warm. Allow rice to cool to room temperature.

    Prepare the Hamachi

    Slice the fresh Hamachi fillet into thin pieces, about 1/4 inch thick. Make sure the knife is sharp to get clean cuts.

    Form the Nigiri

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape. Place a slice of Hamachi on top of the rice, pressing it gently to adhere.

    Serve

    Arrange the Hamachi nigiri on a plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
