Chirashi Preparation

    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the rice using a wooden spatula. Spread the rice onto a tray to cool to room temperature.

    Prepare the Toppings

    Slice the masu, kanpachi, and avocado. For the bluefin otoro, finely chop it into a tartare. Slice the cucumber into thin rounds and chop the negi.

    Assemble the Chirashi

    In a bowl, place a generous scoop of the seasoned sushi rice. Arrange the fish sashimi, otoro tartare, ikura, cucumber, avocado, shiso leaves, and negi on top of the rice.

    Serve

    Enjoy the chirashi immediately, optionally with soy sauce and wasabi on the side.
