    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool slightly.

    Season the Rice

    In a small bowl, mix together rice vinegar, sugar, and salt. Gently fold this mixture into the cooked rice, being careful not to mash the grains. Allow the rice to cool to room temperature.

    Prepare Avocado

    Cut the avocados in half, remove the pit, and scoop out the flesh. Slice the avocado into thin pieces.

    Form Nigiri

    Wet your hands and take a small amount of sushi rice (about 2 tablespoons) and shape it into an oval mound. Top each mound with a slice of avocado.

    Serve

    Arrange the avocado nigiri on a serving plate. Serve with yuzu kosho and tamari on the side for dipping. Sprinkle with sesame seeds and garnish with nori sheets if desired.
