Prepare the Pork Belly

Preheat your oven to 160°C (320°F). Score the skin of the pork belly in a crisscross pattern and season with salt and pepper. Place it in a roasting pan.

Roast the Pork Belly

Roast the pork belly for about 2.5 to 3 hours, or until the meat is tender and the skin is crispy. Baste with its own fat halfway through cooking.

Prepare the Gastrique

In a saucepan, combine rice vinegar and sugar. Cook over medium heat until the sugar dissolves. Add diced red bell pepper and simmer until soft. Blend until smooth and adjust seasoning with salt and pepper.

Cook the Pumpkin

In a separate pot, boil water and add the cubed Japanese pumpkin. Cook until tender, about 10-15 minutes. Drain and set aside.

Plate the Dish

Slice the pork belly and serve it alongside the boiled Japanese pumpkin. Drizzle with pepper rose gastrique and garnish with fresh herbs.
