Prepare the Turkey Legs
Season the turkey legs with salt and black pepper on all sides.

Chop Vegetables
Dice the carrots, celery stalks, and onion. Mince the garlic cloves.
Cooking

Sear the Turkey Legs
In a large heavy-bottomed pot, heat olive oil over medium-high heat. Add the turkey legs and sear until browned on all sides, about 5-7 minutes. Remove and set aside.

Add Tomato Paste
Stir in the tomato paste and cook for another 2 minutes.

Deglaze with Wine
Pour in the white wine and use a wooden spoon to scrape the bottom of the pot, bringing up any browned bits. Allow the wine to reduce for about 3 minutes.

Add Broth and Herbs
Return the turkey legs to the pot. Pour in the chicken broth, add bay leaves and thyme. Bring to a simmer.

Cover the pot and reduce heat to low. Let it cook for 1.5 to 2 hours, or until the turkey meat is tender and falling off the bone.
