    Prepare the Brisket

    Trim excess fat from the brisket and apply a generous amount of BBQ rub to all sides. Let it sit for at least 1 hour at room temperature or refrigerate overnight for better flavor.

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Place the brisket in the smoker and smoke for about 12-14 hours or until it reaches an internal temperature of 195°F (90°C) for tender, juicy meat. Use wood chips of your choice, preferably hickory or mesquite, for the best flavor.

    Rest the Brisket

    Once the brisket is done smoking, remove it from the smoker and wrap it in foil. Let it rest for at least 30 minutes before slicing.

    Assemble the Sandwich

    Slice the brisket against the grain. On a serving plate, layer the sliced brisket, sprinkle shredded cheddar cheese on top, drizzle BBQ ranch dressing, and add onion rings. Serve with a regular side of your choice.
