Preparing the Pork Belly

Cook the Pork Belly
Cut the pork belly into lardons (small cubes). In a skillet over medium heat, add the lardons and cook until crispy and golden brown, about 5-7 minutes. Remove from the skillet and drain on paper towels.
Sautéing the Onions

Sauté the Onions
In the same skillet, add the diced onion and sauté in the rendered fat from the pork belly over medium heat until translucent and caramelized, about 8-10 minutes. Remove from heat and set aside.
Making Roasted Garlic Mayo

Prepare Roasted Garlic
Preheat your oven to 400°F (200°C). Wrap the whole garlic bulb in aluminum foil with a drizzle of olive oil. Roast in the oven for 30-35 minutes until soft. Let cool, then squeeze out the garlic cloves into a bowl.

Mix the Mayo
In a bowl, combine the roasted garlic with mayonnaise, olive oil, salt, and black pepper. Mix until smooth and creamy. Adjust seasoning to taste.
Cooking the Tater Tots

Bake the Tater Tots
Preheat the oven according to the tater tots package instructions. Spread the frozen tater tots on a baking sheet and bake until golden and crispy, about 20-25 minutes, flipping halfway through.

Assemble the Dish
Once the tater tots are cooked, remove them from the oven. Top with crispy pork belly, sautéed onions, and drizzle with roasted garlic mayo. Garnish with chopped scallions before serving.
