Pasta Preparation

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the cavatappi pasta and cook according to package instructions until al dente. Drain and set aside.

Cheese Sauce Preparation

    Make the Roux

    In a large saucepan over medium heat, melt the butter. Once melted, add the all-purpose flour and whisk continuously for about 2 minutes until it forms a paste.

    Add Milk

    Gradually pour in the milk, continuing to whisk to prevent lumps. Cook for about 5-7 minutes until the mixture thickens.

    Add Cheese and Spices

    Reduce heat to low and add the smoked Gouda, sharp cheddar, salt, pepper, garlic powder, onion powder, and paprika. Stir until the cheese is completely melted and the sauce is smooth.

Combine and Bake

    Combine Pasta and Sauce

    Add the drained cavatappi pasta to the cheese sauce and stir until the pasta is well coated.

    Prepare Topping

    In a small bowl, mix together the breadcrumbs, grated Parmesan cheese, and melted butter.

    Preheat your oven to 350°F (175°C). Transfer the mac and cheese to a greased baking dish. Evenly sprinkle the breadcrumb mixture on top. Bake for 25-30 minutes or until the top is golden brown and crispy.
