Marinate Chicken
- 1
Prepare the Marinade
In a large bowl, combine buttermilk, hot sauce, garlic powder, onion powder, salt, and black pepper. Mix well.
- 2
Marinate the Chicken
Add the chicken thighs to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.
Bread the Chicken

Prepare the Breading
In a separate bowl, whisk together the all-purpose flour, cornstarch, paprika, cayenne pepper, and salt.
- 4
Bread the Chicken
Remove chicken from the marinade and let the excess drip off. Dredge each piece in the flour mixture, pressing gently to adhere. Set aside on a wire rack.
Fry the Chicken
- 5
Heat the Oil
In a deep skillet or fryer, heat vegetable oil to 350°F (175°C).
- 6
Fry the Chicken
Carefully add the breaded chicken to the hot oil, cooking in batches if necessary. Fry until golden brown and cooked through, about 6-8 minutes per side. Remove and place on paper towels to drain excess oil.
