Burger Preparation

    Prepare the Beef Patties

    In a large bowl, combine the ground beef with salt and black pepper. Mix gently to combine, being careful not to overwork the meat. Divide the mixture into two equal portions and shape them into patties, about 3/4 inch thick.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Place the patties on the grill and cook for about 4-5 minutes on one side. Flip the patties and cook for another 3-4 minutes for medium doneness, or until they reach your desired level of doneness.

    Sauté the Onions

    While the patties are cooking, slice the onion into thin rings. In a small skillet, add a splash of oil and heat over medium heat. Add the sliced onions and sauté for about 5-7 minutes, until they are golden and tender.

    Prepare the Tomato and Lettuce

    While the onions are cooking, wash the lettuce leaves and pat them dry. Slice the tomato into thick slices.

    Toast the Brioche Buns

    Once the patties are almost done, slice the brioche buns in half and place them on the grill or skillet, cut side down. Toast for about 1-2 minutes until golden brown.

    Assemble the Burger

    On the bottom half of each toasted brioche bun, spread 2 tablespoons of garlic aioli. Place a lettuce leaf on top, followed by a slice of tomato, the cooked beef patty, sautéed onions, and finally the refrigerator pickles. Top with the other half of the brioche bun.
