    Prepare the Mushrooms

    Clean the Portabella and brown mushrooms by wiping them with a damp cloth. Remove the stems from the Portabella mushrooms and slice them into thin strips. Slice the brown mushrooms as well.

    Mince the Garlic

    Peel and mince the garlic cloves finely.

Cooking

    Cook the Mushrooms

    In a large skillet over medium heat, melt 2 tablespoons of butter. Add the sliced Portabella and brown mushrooms, and sauté for about 5-7 minutes until they are tender and browned.

    Prepare the Scampi Sauce

    Add the minced garlic to the skillet with the mushrooms and cook for an additional 1-2 minutes until fragrant. Pour in the white wine and lemon juice, and bring to a simmer. Add the red pepper flakes, salt, and black pepper.

    Finish the Sauce

    Allow the sauce to simmer for about 3-5 minutes, letting the flavors meld together while the alcohol from the wine cooks off. Stir in the remaining 2 tablespoons of butter until melted and the sauce is silky.

    Add Cheese

    Sprinkle the gouda cheese over the mushrooms and scampi sauce, and cover the skillet. Allow the cheese to melt for about 2-3 minutes.

Serving

    Serve the Dish

    Slice the bread and serve warm alongside the mushroom scampi. Use the bread to soak up the delicious sauce.
