Preparing the Beef

Slow Cook the Beef
In a slow cooker, add the shaved prime beef. Pour in the beef broth, Worcestershire sauce, garlic powder, onion powder, black pepper, and salt. Stir to combine. Cover and cook on low for 6-8 hours or until the beef is tender and easily shreds.
Making the Au Jus

Prepare the Au Jus
Once the beef is cooked, remove the beef from the slow cooker and set aside. Strain the liquid through a fine sieve into a saucepan to remove any solids. Heat over medium heat until warmed through, adjusting seasoning to taste if necessary.
Assembling the Sandwiches

Build the Sandwich
Slice the hoagie rolls in half and place them on a baking sheet. Layer the shaved prime beef inside each roll, then top with slices of Swiss cheese. Place under the broiler for 2-3 minutes until the cheese is melted and bubbly.

Serve the sandwiches hot with the strained au jus in small bowls for dipping.
