Method

For the Country Fried Steak

  1. 1

    Prepare the Steak

Slice the beef round steak into 4 equal portions. Gently pound each piece to about 1/2 inch thickness.

  2. 2

    Set Up Breading Station

In one bowl, combine the flour with salt, black pepper, and paprika. In another bowl, whisk together the buttermilk and eggs.

  3. 3

    Bread the Steak

Dip each piece of steak into the buttermilk mixture, then dredge in the seasoned flour, ensuring a good coating.

  4. 4

    Fry the Steak

In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded steaks and fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and set aside on a paper towel to drain excess oil.

For the Southern Peppercorn Gravy

  1. 5

    Make the Gravy

In the same skillet used for frying the steak, reduce the heat to medium and add the drippings. Sprinkle in the flour and whisk for about 1-2 minutes until the mixture is golden brown.

  2. 6

    Add Milk

Slowly pour in the milk while continuously whisking to avoid lumps. Add black pepper and salt to taste. Cook until the gravy thickens, about 3-5 minutes.

For the Mashed Potatoes

  1. 7

    Prepare the Potatoes

Peel and cut the potatoes into quarters. Place them in a large pot and cover with cold water.

  2. 8

    Cook the Potatoes

Bring to a boil and cook until potatoes are tender, about 15-20 minutes. Drain and return to the pot.

  3. 9

    Mash the Potatoes

Add butter and milk to the potatoes. Mash until smooth and creamy. Season with salt to taste.

For the Refrigerator Pickles

  1. 10

    Prepare the Cucumbers

Slice the cucumbers into rounds or spears, based on your preference.

  2. 11

    Make the Pickling Brine

In a bowl, combine vinegar, water, sugar, and salt. Stir until the sugar and salt dissolve.

  3. 12

    Pickle the Cucumbers

Add sliced cucumbers, garlic cloves, and dill into a jar. Pour the pickling brine over them, ensuring they are fully submerged. Seal the jar and refrigerate for at least 2 hours before serving.
