For the Risotto

    Prepare the Broth

    In a saucepan, heat the chicken broth over medium heat until it simmers. Keep it warm but not boiling.

    Cook the Aromatics

    In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Add Vegetables

    Stir in the diced carrots and celery. Cook for about 3-4 minutes until they begin to soften.

    Toast the Rice

    Add the Arborio rice to the skillet and stir for 2-3 minutes until the rice is lightly toasted.

    Add Broth Gradually

    Begin adding the warm chicken broth, one ladle at a time. Stir frequently and let the rice absorb the broth before adding more. Continue this process for about 18-20 minutes until the rice is creamy and al dente.

    Finish the Risotto

    Once the rice is cooked, stir in the frozen peas, heavy cream, remaining butter, salt, black pepper, and chopped thyme. Mix well and let it simmer for 2-3 minutes until heated through.

    Prepare the Chicken

    Preheat your grill to medium-high heat. Rub the chicken breasts with olive oil, salt, and black pepper.

    Grill the Chicken

    Place the chicken on the grill and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing.

For the Buttermilk Biscuit

    Preheat your oven to 450°F (232°C).

    In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
