Bacon and Chicken Coating

Southern Peppercorn Gravy

Method

Preparing the Chicken Fried Bacon

  1. 1

    Cook the Bacon

In a skillet over medium heat, cook the bacon strips until crispy. Remove from skillet and place on paper towels to drain excess grease.

  2. 2

    Prepare the Coating

In a bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, garlic powder, and onion powder.

  3. 3

    Prepare the Egg Mixture

In another bowl, whisk together the eggs and milk until well combined.

  4. 4

    Coat the Bacon

Dip each bacon strip first in the flour mixture, then in the egg mixture, and finally back in the flour mixture to create a thick coating.

  5. 5

    Fry the Bacon

In the same skillet used for cooking bacon, add enough oil to cover the bottom. Heat over medium-high heat. Fry each coated bacon strip until golden brown and crispy, about 2-3 minutes on each side. Remove and place on paper towels to drain.

Making the Southern Peppercorn Gravy

  1. 6

    Make a Roux

In a saucepan, melt butter over medium heat. Once melted, whisk in the flour to create a roux, cooking for about 2 minutes until it turns a light golden color.

  2. 7

    Add Milk

Slowly whisk in the milk, ensuring there are no lumps. Cook, stirring constantly, until the gravy thickens, about 5-7 minutes.

  3. 8

    Season the Gravy

Add black pepper and salt to the gravy, adjusting seasoning to taste. Stir well to combine.
