Beef Tenderloin

    Prepare the Beef

    Preheat the grill to high heat. Rub the beef tenderloin with olive oil, salt, black pepper, and garlic powder. Let it rest for about 30 minutes at room temperature.

    Grill the Beef

    Place the beef tenderloin on the grill and cook for about 4-5 minutes per side for medium-rare, or until it reaches your desired doneness. Remove from the grill and let it rest for 10 minutes before slicing.

White Cheddar Potato Gratin

    Prepare the Potatoes

    Preheat the oven to 375°F (190°C). Peel and slice the russet potatoes thinly.

    Layer the Gratin

    In a greased baking dish, layer the sliced potatoes, sprinkling salt, black pepper, thyme, minced garlic, and shredded white cheddar cheese between the layers.

    Add Cream and Bake

    Pour heavy cream evenly over the layered potatoes and top with remaining cheese. Dot with butter. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden brown.

Charred Scallion Mushroom Sauce

    Sauté the Vegetables

    In a skillet over medium heat, melt butter and add sliced mushrooms, chopped scallions, and minced garlic. Sauté until mushrooms are browned and scallions are tender.

    Add Broth and Season

    Pour in beef broth, season with salt and black pepper, and let it simmer for about 10 minutes until slightly thickened.

Asparagus

    Prepare the Asparagus

    Trim the ends of the asparagus and toss with olive oil, salt, and black pepper.

    Sauté the Asparagus

    In a skillet over medium-high heat, sauté the asparagus for about 5-7 minutes until tender and slightly charred.
