Method

Preparing the Steak

  1. 1

    Season the Filet Mignon

Pat the filet mignon pieces dry with paper towels. Rub them with olive oil, sea salt, and black pepper evenly on all sides.

  2. 2

    Sear the Steak

In a heavy skillet, heat over medium-high heat. Once hot, add the filet mignon and sear each side for about 3-4 minutes, creating a nice crust.

  3. 3

    Add Flavor

Add the butter, garlic cloves (crushed), and rosemary into the skillet. Continue to cook, basting the steak with the melted butter for an additional 2-3 minutes.

  4. 4

    Rest the Steak

Remove the filet mignon from the skillet and let it rest for about 5 minutes before slicing.

Preparing the Side

  1. 5

    Prepare the Asparagus

Trim the ends of the asparagus and place them in a bowl. Drizzle with olive oil, salt, and black pepper, then toss to coat evenly.

  2. 6

    Roast the Asparagus

Spread the asparagus on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 10-12 minutes until tender.

  3. 7

    Prepare the Cherry Tomatoes

In a separate bowl, combine cherry tomatoes with balsamic vinegar, honey, salt, and black pepper. Toss to coat.

  4. 8

    Combine and Serve

Once the asparagus is roasted, add the cherry tomatoes to the baking sheet for the last 2 minutes of roasting. Serve alongside the filet mignon.
