Preparation

    Prepare the Vegetables

    Peel and dice the sweet potato and beets into small cubes. Slice the squash and chop the scallions.

    Cook the Hash

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sweet potato and beet cubes and cook for about 10 minutes until tender. Add the squash and continue cooking for another 5 minutes.

    Add Spinach

    Stir in the spinach and cook until wilted. Add the hash browns and mix well. Season with salt and pepper to taste.

Cooking the Eggs

    Poach the Eggs

    In a separate pot, bring water to a gentle simmer. Add a splash of vinegar and gently crack the eggs into the water, poaching them for about 3-4 minutes until the whites are set but the yolks are still runny.

Assembly

    Serve

    Spoon the veggie hash onto plates and top each serving with a poached egg. Garnish with chopped scallions and enjoy!
