    In a bowl, mix masa harina and water until a dough forms. Take a portion of the dough and flatten it into a disc. Place cheese and optional refried beans in the center, then fold the edges over to seal. Cook on a hot griddle for about 5 minutes on each side until golden brown.

    In a bowl, beat together masa harina and lard until smooth. Gradually add chicken broth until you achieve a spreadable consistency. Spread a portion of the masa onto a corn husk, add cooked chicken or pork, then fold the husk over and steam for about 1 hour.
