Preparation and Cooking

    Prepare the Home Fries

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden brown and crispy, about 15-20 minutes. Stir occasionally to ensure even cooking.

    Sauté the Vegetables

    In another skillet, heat the remaining tablespoon of olive oil over medium heat. Add the sliced mushrooms and cook until softened, about 5 minutes. Add the spinach and diced ham, cooking until the spinach wilts. Remove from heat.

    Prepare the Omelette

    In a bowl, whisk together the eggs, salt, and pepper. Pour the egg mixture into a non-stick skillet over medium heat. Cook until the edges begin to set, then add the sautéed vegetables and shredded jack cheese on one half of the omelette.

    Fold and Finish

    Once the cheese begins to melt and the eggs are mostly set, fold the omelette in half and let it cook for another minute. Slide the omelette onto a plate.

    Serve

    Top the omelette with sour cream and red or green chile sauce. Serve with the home fries and toast on the side.
