Method

Preparing Chile Relleno

    Roast the Peppers

    Char the poblano peppers over an open flame or broiler until the skin is blistered and blackened. Place them in a bowl and cover with plastic wrap to steam for about 10 minutes. Remove the skins, seeds, and stems.

    Stuff the Peppers

    Stuff each pepper with cheese and secure the opening with a toothpick if necessary.

    Make the Batter

    In a bowl, beat the eggs until fluffy and mix in the flour. Dip each stuffed pepper into the batter.

    Fry the Peppers

    Heat oil in a skillet over medium heat. Fry each battered pepper until golden brown on all sides. Drain on paper towels.

Making Roasted Tomato Salsa

    Roast Ingredients

    Place tomatoes, onion, and garlic on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 20 minutes until softened and slightly charred.

    Blend the Salsa

    In a blender, combine the roasted ingredients with cilantro, lime juice, and salt. Blend until smooth.

Cooking Refried Beans

    In a saucepan, heat oil over medium heat. Add the chopped onions and sauté until translucent.

    Add the canned refried beans to the pan and stir until heated through.

Cooking Eggs

    In a separate skillet, cook the eggs to your liking (scrambled, fried, or poached) with salt and pepper.

Assembling the Dish

    On a plate, serve the fried chile relleno alongside the refried beans, cooked eggs, and warm corn tortillas. Top with roasted tomato salsa.
