Preparing Chile Relleno

Roast the Peppers
Char the poblano peppers over an open flame or broiler until the skin is blistered and blackened. Place them in a bowl and cover with plastic wrap to steam for about 10 minutes. Remove the skins, seeds, and stems.

Stuff the Peppers
Stuff each pepper with cheese and secure the opening with a toothpick if necessary.

Fry the Peppers
Heat oil in a skillet over medium heat. Fry each battered pepper until golden brown on all sides. Drain on paper towels.
Making Roasted Tomato Salsa

Roast Ingredients
Place tomatoes, onion, and garlic on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 20 minutes until softened and slightly charred.

Blend the Salsa
In a blender, combine the roasted ingredients with cilantro, lime juice, and salt. Blend until smooth.

Add the canned refried beans to the pan and stir until heated through.

Serve
On a plate, serve the fried chile relleno alongside the refried beans, cooked eggs, and warm corn tortillas. Top with roasted tomato salsa.
