Bagel Preparation

Make the Dough
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy. Add flour and salt, then mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place in a greased bowl and cover for 1 hour, or until doubled in size.

Shape the Bagels
Preheat the oven to 425°F (220°C). Punch down the dough and divide it into 8 pieces. Roll each piece into a ball, then poke a hole through the center with your finger and stretch to form a bagel shape.

Boil the Bagels
In a large pot, bring water to a boil and add baking soda. Boil each bagel for about 1 minute on each side, then remove and place on a baking sheet lined with parchment paper.

Prepare the Bagel
Slice the cooled bagel in half and spread cream cheese generously on both halves.

Add Toppings
Layer smoked salmon, arugula, capers, and thin slices of red onion on top of the cream cheese.

Close the bagel and cut in half if desired. Serve immediately.
