    Prepare the Ingredients

    Chop the smoked duck, bell pepper, onion, and chile into small pieces.

    Cook the Hash Browns

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cheesy hash browns and cook until golden brown and crispy, about 5-7 minutes. Remove from the skillet and set aside.

    In the same skillet, add the remaining olive oil, then add the chopped onion, bell pepper, and chile. Sauté until they are tender, about 3-4 minutes.

    In a separate pan, fry the eggs to your liking (sunny-side up, over-easy, etc.). Season with salt and black pepper.

    Fold the crispy hash browns into the duck and vegetable mixture. Serve on tortillas topped with the cooked eggs.
