    Rinse the dried pinto beans and soak them in water overnight. Drain and rinse again. In a pot, combine the beans, 4 cups of water, salt, garlic powder, and onion powder. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beans are tender. Drain and set aside.

Spanish Rice

    Cook the Spanish Rice

    In a medium saucepan, heat olive oil over medium heat. Add diced onion and cook until translucent. Stir in minced garlic, cumin, and chili powder, cooking for an additional minute. Add rice, tomato sauce, and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes until rice is cooked and water is absorbed.

Refried Beans

    Make the Refried Beans

    In a skillet, heat olive oil over medium heat. Add cooked pinto beans and mash them with a fork or potato masher. Stir in salt and cumin, cooking until heated through. Remove from heat and mix in shredded cheese until melted.
