Cooking Pinto Beans

    Prepare the Beans

    Rinse the pinto beans under cold water and remove any debris. Soak the beans in water overnight or for at least 8 hours.

    Cook the Beans

    Drain the soaked beans and place them in a pot. Add 4 cups of fresh water, diced onion, minced garlic, salt, cumin, black pepper, and olive oil. Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours or until beans are tender.

Cooking Basmati Spanish Rice

    Prepare the Rice

    Rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch.

    Cook the Rice

    In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the rinsed rice and toast for 2-3 minutes until slightly golden. Add 2 cups of water, tomato sauce, garlic powder, onion powder, and salt. Bring to a boil, then reduce heat to low. Cover and simmer for about 15 minutes or until the rice is cooked and water is absorbed.

    Fluff the rice with a fork and stir in chopped cilantro if desired. Serve the pinto beans alongside the basmati Spanish rice.
