Omelette Preparation

    Prepare the filling

    In a skillet over medium heat, add the diced ham, chopped mushrooms, and fresh spinach. Sauté until the spinach is wilted and the mushrooms are tender, about 3-5 minutes. Set aside.

    Cook the omelette

    In a bowl, whisk the eggs until well blended. Heat a non-stick skillet over medium heat and pour in the eggs. Allow to cook for 1-2 minutes until the edges begin to set.

    Add the filling

    Add the sautéed ham, mushrooms, and spinach mixture to one half of the omelette, then sprinkle the jack cheese on top. Carefully fold the other half over the filling and cook for another 1-2 minutes until the cheese melts.

    Top with chile

    Remove from heat and top with sour cream and your choice of red or green chile.

Homefries Preparation

    Cook the homefries

    In another skillet, heat olive oil over medium heat. Add diced potatoes, chopped onion, and bell pepper. Season with salt and pepper. Cook until the potatoes are golden brown and tender, about 15-20 minutes, stirring occasionally.

    Toast the bread

    While the omelette and homefries are cooking, toast the slices of bread and spread with butter once done.
