Making Tomatillo Salsa

Prepare the Tomatillos
Remove the husks from the tomatillos and rinse them under warm water to remove the stickiness.

Adjust Seasoning
Taste the salsa and adjust the seasoning with more salt or lime juice if needed.
Preparing the Mole Colorado or Suiza

Prepare the Chiles
Remove stems and seeds from the dried ancho and guajillo chiles. Toast them in a dry skillet over medium heat for about 2-3 minutes until fragrant.

Soak the Chiles
Place the toasted chiles in a bowl and cover with hot water. Let them soak for about 15 minutes until softened.

Blend the Mole Base
In a blender, combine the soaked chiles, chicken broth, onion, cumin, oregano, and sugar. Blend until smooth.
