Tomatillo Salsa

Mole Colorado or Suiza Base

Method

Making Tomatillo Salsa

  1. 1

    Prepare the Tomatillos

Remove the husks from the tomatillos and rinse them under warm water to remove the stickiness.

  2. 2

    Blend Salsa Ingredients

In a blender, combine the tomatillos, cilantro, jalapeño (seeded for less heat), garlic, lime juice, salt, and olive oil. Blend until smooth.

  3. 3

    Adjust Seasoning

Taste the salsa and adjust the seasoning with more salt or lime juice if needed.

Preparing the Mole Colorado or Suiza

  1. 4

    Prepare the Chiles

Remove stems and seeds from the dried ancho and guajillo chiles. Toast them in a dry skillet over medium heat for about 2-3 minutes until fragrant.

  2. 5

    Soak the Chiles

Place the toasted chiles in a bowl and cover with hot water. Let them soak for about 15 minutes until softened.

  3. 6

    Blend the Mole Base

In a blender, combine the soaked chiles, chicken broth, onion, cumin, oregano, and sugar. Blend until smooth.

  4. 7

    Cook the Mole

In a saucepan over medium heat, add the blended mole base and simmer for about 15-20 minutes, stirring occasionally.
