Enchiladas

    Prepare the Filling

    In a bowl, mix cooked chicken or sautéed veggies with chopped onion. Set aside.

    Assemble the Enchiladas

    Preheat oven to 375°F (190°C). Soften corn tortillas in a hot skillet. Fill each tortilla with the chicken or veggie mixture, roll them up, and place them seam-side down in a baking dish.

    Add Sauce and Cheese

    Pour the Mole Colorado sauce over the enchiladas, then sprinkle with shredded cheese.

    Bake

    Cover the dish with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is bubbly.

Spanish Rice

    Cook the Rice

    In a saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent.

    Combine Ingredients

    Add rice to the pan and stir for a minute, then add diced tomatoes, vegetable broth, cumin, and salt. Bring to a boil.

    Simmer

    Reduce heat to low, cover, and let simmer for about 20 minutes or until the rice is cooked and liquid is absorbed.

Grilled Banana

    Prepare the Bananas

    Preheat a grill or grill pan over medium heat. Slice the bananas in half lengthwise.

    Grill

    Place the banana halves cut-side down on the grill. Cook for about 2-3 minutes until grill marks appear.

    Serve

    Drizzle with honey or maple syrup before serving.
