Preparing Enchiladas

Prepare Filling
In a large bowl, combine shredded chicken, grilled onions, and half of the jack cheese. If using tofu, combine it with zucchini and corn instead.

Assemble Enchiladas
Preheat the oven to 350°F (175°C). Take a corn tortilla, fill it with the chicken or tofu mixture, roll it up, and place it seam side down in a baking dish. Repeat with remaining tortillas.

Add Sauce and Cheese
Pour the red or green chile sauce over the rolled enchiladas, then sprinkle with the remaining jack cheese.

Bake
Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.

Cook Rice
In a saucepan, cook the rice according to package instructions. Once cooked, set aside.
