Enchiladas

Rice & Beans

Method

Preparing Enchiladas

  1. 1

    Prepare Filling

In a large bowl, combine shredded chicken, grilled onions, and half of the jack cheese. If using tofu, combine it with zucchini and corn instead.

  2. 2

    Assemble Enchiladas

Preheat the oven to 350°F (175°C). Take a corn tortilla, fill it with the chicken or tofu mixture, roll it up, and place it seam side down in a baking dish. Repeat with remaining tortillas.

  3. 3

    Add Sauce and Cheese

Pour the red or green chile sauce over the rolled enchiladas, then sprinkle with the remaining jack cheese.

  4. 4

    Bake

Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.

Preparing Rice & Beans

  1. 5

    Cook Rice

In a saucepan, cook the rice according to package instructions. Once cooked, set aside.

  2. 6

    Prepare Beans

In a skillet, heat olive oil over medium heat. Add cooked black beans, cumin, and salt. Stir to combine and heat through.

  3. 7

    Serve

Serve the enchiladas alongside the rice and beans.
