Peel the russet potatoes and grate them using a box grater or food processor. Place the grated potatoes in a bowl and cover them with cold water. Let them soak for about 10 minutes to remove excess starch.

After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove as much moisture as possible.

In a large skillet, heat the vegetable oil over medium-high heat until it's shimmering.
