    Peel the russet potatoes and grate them using a box grater or food processor. Place the grated potatoes in a bowl and cover them with cold water. Let them soak for about 10 minutes to remove excess starch.

    While the potatoes are soaking, finely chop the onion.

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove as much moisture as possible.

Cooking

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until it's shimmering.

    Cook the Hashbrowns

    Add the grated potatoes and chopped onion to the skillet. Spread them out into an even layer. Season with salt and black pepper.

    Cook for about 5-7 minutes on one side, or until golden brown and crispy. Flip the hashbrowns carefully and cook for another 5-7 minutes on the other side until they are crispy and browned.

    Once cooked, transfer the hashbrowns to a paper towel-lined plate to absorb any excess oil.
