Method

Cooking the Salmon

    Prepare the Marinade

    In a small bowl, mix together olive oil, lime juice, cumin, chili powder, and salt. Coat the salmon fillets with the marinade and let sit for 15 minutes.

    Grill the Salmon

    Preheat the grill to medium-high heat. Place the marinated salmon fillets on the grill and cook for about 5-6 minutes on each side or until cooked through. Once done, remove from the grill and let rest for a few minutes before flaking.

Preparing the Yogurt Sauce

    Mix the Sauce

    In a bowl, combine Greek yogurt, grated cucumber, chopped dill, minced garlic, lemon juice, and salt. Mix well and refrigerate until ready to serve.

Assembling the Tacos

    Prepare the Tacos

    Warm the corn tortillas on a skillet or grill. Top each tortilla with flaked salmon, sliced avocado, and shredded red cabbage. Drizzle with yogurt cucumber dill sauce.

Serving the Pintos and Rice

    In a bowl, mix the cooked pinto beans with chopped cilantro. Serve alongside the tacos with cooked rice and lime wedges.
